Roasted Stuffed Heart Mushroom

Time 1 hour
Serving : 8


Ingredients

8 large flat mushrooms
Olive oil
1 chopped onion
2 garlic cloves
1 large bunch spinach
1 cup low fat cheese
250 gms cottage cheese
1 tsp grated lemon
120 gm salad leaves
200 gm tomatoes
1 tbs vinegar

Method
Trim mushroom stems and chop it finely.

Heat non stick pan and spray oil.

Add onion and cook it for 5 minutes.

Next add mushroom stem and cottage cheese. Cook until soft.

Next add garlic until aroma.

Place spinach.

Cover with boiling water.Keep aside for 30 minutes.

Squeeze out the excess of liquid.
Chop finely.
Stir in the onion mixture and lemon.

Add pepper seasoning.

Preheat oven to 180 degrees.
On baking tray place mushrooms.

Place mixture on mushrooms.
Cover with foil.Roast for 15 minutes.

Remove foil and roast until tender.
Serve hot.

Moroccan Chicken Saan!




You need-

1/2  cup soy sauce

1/2  cup fresh lemon juice

1/2  cup honey

1/2  tsp grounded thyme

2  tsp curry powder

1/2  tsp dried oregano

1/2  tsp ground ginger

1/2  tsp black pepper

1  clove garlic pressed

3  pounds cut up chicken pieces

2  tsp olive oil

8  pitted prunes

8  dried apricot halves

1/2  cup sherry



Prep:15 m
Cook:30 min


Method-

1)Whisk together soy sauce, lemon juice, honey,thyme, sherry,curry powder, oregano, ginger,black pepper & garlic.
Place the marinade with the chicken into a resealable bag & marinate for 30 min to 24 hours.

2)Heat olive oil in skillet over medium-high heat & cook the chicken pieces until brown on all sides.
Sprinkle the chicken with prunes & apricots, pour the marinade into skillet.
Bring to a simmer,cover & cook for 30 min. Uncover & simmer until the sauce is slightly thickened.

3)Take satte sticks & alternate chicken with red,green,yellow bell peppers.

4)Serve hot.

Strawberry Yogurt(Strawberry Raita)


You need-

Curd  1 cup
Strawberry finely chopped  1 cup
Finely chopped Onion 1
Finely chopped green chillies  1
Sugar  2 tsp
Cumin(jeera)powder  2 tsp
Black pepper powder  1 tsp
Salt to taste
Chopped Green Coriander  1 tsp


Method-


1)Wash Strawberry, remove stem,cut strawberry in small pieces.

2)Add curd(yogurt),sugar,salt,cumin powder, black pepper powder in a bowl & mix well.

3)Add chopped onion,green chilli,green coriander, strawberry to bowl.Mix well.

4)Serve cold.
